Oh my goodness. I am in love! With Cauliflower rice. Essentially this is just grated cauliflower (or pulse in a food processor depending on how retentive you are 🙂 )
Heat olive oil in a skillet over medium heat; add cauliflower ‘rice’, salt, and pepper. Cover skillet and cook until heated through, 3 to 5 minutes. Remove lid and fluff ‘rice’ with a fork.
Try this instead of rice to cut down on starches or reduce calories. I was pleasantly surprised at how good it was. I just added some curry and yummed it all up.
If you haven’t ever tried it, you gotta do it. Not only is it a great alternative to rice, but it is super speedy. From head of cauliflower to your dish in just a few minutes! For those dishes that you wish you could put over rice… but you forgot to start the rice… this is a great option.
